Liber & Co. is the Texas cocktail syrup company founded in 2011 by Robert Higginbotham, Chris Harrison and Adam Higginbotham after they noticed that the best bars in New York, D.C. and Austin all relied on house-made syrups, and it now makes its syrups at its own facility in Austin. Their coconut syrup starts with certified organic, fair-trade Laguna Tall coconuts from Luzon Island in the Philippines, harvested by hand year-round with the traditional hooked pole. Liber toasts the coconut to a medium level for a light nuttiness and more depth than plain coconut, and builds the syrup with cane sugar, coconut sugar for caramelized sweetness, cold-pressed lemon oil for a sharp, floral top note, gum arabic for body and a pinch of salt to round it out. A little natural sediment from the coconut sugar may settle at the bottom of the bottle; that's expected. This 375ml bottle has an 18-month shelf life unopened and stays fresh at least 12 months refrigerated after opening.
